Hello Roadrunners

This week our students in Advanced Culinary have truly delved into the unit on Flavors and Flavorings. We began to learn about various cheeses and the importance of not only how it is made but more so, what type of cheese is good for specific dishes. To end the week , they worked in pairs to create a Cheesy Jalapeno Breadstick that accompanied their very own Spicy Pepper Jack Cheese Dip. In addition, this week brought a slight change to our curriculum, as students in Advanced Culinary were challenged to begin creating the first ever San Tan Culinary Cookbook. This cookbook will feature the unique dishes each of our young chefs have created during our time together. Our Adv. Culinary students have been hard at work redefining various recipes to include, entrees, dips, sauces, and appetizers for this cookbook.

Looking ahead into next week, we will once again be visited by Chef Kirshore. However, during the Chef’s visit he will be the guest judge as our students will be looking at recreating his dish while adding their personal flair to it. Students will be working in pairs and challenged to redefine his dish but must use a minimum of five (5) of his original ingredients. This will challenge our student’s ability to pair flavors and ingredients in a manner that will compliment them. I am truly looking forward to seeing what they come up with.

As a reminder, mark your calendars, on Saturday, Oct 29th, the Advanced Culinary class will be working collaboratively with the other electives to create an “Elective Showcase”. The students in Adv. Culinary will be responsible for creating their own hors d’Oeuvres creation. This will provide our students the opportunity to showcase their very own creation and allow our community the opportunity to taste it. We hope you all come out in support of the showcase and taste some great creations. Date, time, cost for the event will be broadcasted at a later date.
