Culinary Weekly Update
Hello Roadrunners,
This past week in all Culinary Art classes we collaborated with Ms. Hirepan and her Spanish classes in preparing Tamales for the “Festival of the Candelaria”. The students did a great job in preparing them for which they made meat and vegetarian tamales. Because of time constraints in class (as the tamales take approximately 50 minutes to prepare) the students were encouraged to take them home to enjoy with their families (I hope they shared with everyone).
As we move ahead, this week our students were introduced to Quick Breads such as, waffles, pancakes, and French toast. These quick breads are essential as they are in every menu in restaurants and at home. This week our culinary students will be challenged to work in groups of 4-5 in order to successfully create each of these breakfast breads in a mini practicum. In addition to the quick breads, the groups are to make 2 different fruit compotes as toppings. In addition to simply creating these dishes, our students will have to plate a dish which will be ranked by their peers as well. During this practicum each our groups will receive 2 grades, a group grade and individual grade.
As we understand things may arise; please know all assignments, assessments, presentations, and recipes are uploaded into our google classroom for everyone’s convenience. Also, anyone missing any work are encouraged to complete the assignment and/or practicum at home and submit for credit.
