Hello Roadrunners

This week we delved into Safety & Sanitation, which is the foundation of culinary in assuring everyone is following the guidelines which ensure all ingredients are within the Hazardous Analysis Critical Points (HACCP). In addition, we were able to take a break, as the students in the Culinary I class acted as judges for the Advanced Culinary students during the Flavors and Flavorings practicum. This provided them with the opportunity to witness how all the lessons learned during culinary I will impact them at the next level.

Looking ahead into next week, we will finish our Safety and Sanitation unit with Cross-contamination. During this unit, students will be challenged to begin to identify areas of cross-contamination and ways to either prevent it or rectify it.

Also, every student has been given the link for the Food Handler’s Certification. Without this certification students will not be allowed to participate in the practicums. With that being said, each student will be given every opportunity to pass the exam.
